El Compa Oaxaqueno isn't a restaurant that got its recipes from a cookbook. Our kitchen runs on memories — of Sunday mole with the family, of chiles dried on the roof, of hands that know exactly how long a tlayuda needs on the comal.
We import our chocolate from Oaxaca's own cacao cooperatives. Our chiles come from the valleys of Teotitlán. Every dish is a letter home, written in spice and smoke.
